Sweet Holiday Treats (literally!)

As we all gather with our family and friends during this holiday season, one of the many things that we will share is lots (and lots) of great food. Two of the sweeter, yet staple, treats of any Pilipino holiday gathering are puto and bibingka.

 Puto is the spongy rice treat that comes in various forms and colors. The traditional puto is white and has a slight sweetness to it. Puto Bumbong is usually purple in color (coming from the special Pirurutong rice used for this particular version) and topped with coconut mixed with sugar to give it much more of a sweeter taste. Most commonly served as a dessert, it can also be used as a perfect snack with coffee or hot chocolate.

Bibingka is a cake that is similar to a pancake in appearance, but is uniquely different in taste and texture. There are two different types of bibingka: Bibingka Galapong, made with rice cake, and Cassava Bibingka, made with cassava root. The cassava version of bibingka is a personal favorite of mine. It is usually topped with a butter spread and sprinkled with sugar.
