Hello again! Let me recap what I said last time. Last time I said that this video series is a revival of the videos I used to shoot, which were formerly known as "A FilAm in P.I.". What do Vince Vaughn, the Chicago Bulls, and a restaurant that serves San Miguel and pancit have in common?  They are the answers the public gave when Victoria's Secret asked "What's Sexy Now Chicago?"  And you can't find a much bigger authority on sexiness than Victoria's Secret. 

To be fair, this is not your neighborhood Pilipino restaurant.  Sunda, which opened its doors in March of 2009, is the newest downtown place to be seen.

BibingkaDuring the holiday season, you'll surely see the food and treats you look forward to. Familiar tastes and smells spark so much joy at family gatherings. One tradition you may be excited about is Bibingka, the Philippine treat wrapped thoughtfully in banana leaves.
 
Bibingka is a cake typically made with rice flour, sugar and chicken eggs, with an addition of salted duck eggs and the local soft cheese made with milk. The cake is commonly topped with freshly grated coconut and is baked in a clay oven over a wood fire.

Arroz CaldoArroz Caldo

Despite its Spanish name, Arroz Caldo is the Filipino version of the Chinese porridge that was adapted to the tastes of the Spanish colonial settlers who patronized Chinese restaurants in the Philippines. As the Spanish could not pronounce Chinese, they gave it a Spanish name for easy reference. “Arroz” means “Rice” and “Caldo” means “Hot”, which makes it a perfect part of the Noche Buena – the traditional Pilipino Christmas Eve feast.

Adobofest 2009 Crowns "Chicago's Best Adobo"

While FPAC was happening on the West Coast, the Pilipino community of Chicago was also gathering together to celebrate their accomplishments and culture.  However, our gathering was a bit more focused on one aspect of our culture: the food!  The second annual Adobofest was put on by the Filipino American Network of Chicago (FAN Chicago) in order to find the city's best adobo.  During his trip to the Philippines, Anthony Bourdain was confused by the fact that there was no clear definition of what identifies Pilipino food, and concluded that it's really defined by its diversity.  That was quite clear at Adobofest, where there was everything from traditional chicken and pork adobo to adobo with plantains to tofu adobo.

Professional Spotlight: Chef Larry Banares

Chef LarryWhat do me and Michael Jackson have in common?  A legion of fans world wide?  Dozens of multi-platinum records?  Being a dancing machine?  Actually it's something almost equally as awesome, having eaten food prepared by Chef Larry!  A good 8 years or so ago there was a film premiering in San Diego by the title of "The Debut."  Being the first full length feature film to be produced, directed, and staring Pilipina/o Americans aired in theatres it was definitely a very momentous occasion for the community, and I had the privilege of being able to volunteer for the release at my local theater.  I remember it being very hectic and I was extremely hungry; I then see this delectable looking sandwich on the table in the mock "green room" that was created in the theater.  I plop down on the chair in front of the table and take a humongous bite in the (to this very day) most absolutely delicious sandwich I have ever eaten.
